A lighter take on traditional Greek spanakopita, these spring rolls use filo pastry and are filled with spinach, feta cheese, and spices, making for a delicious snack or appetizer. Perfect for a taste of Greece while staying home!

1: Preheat oven to 350°F. 2: Cook the spinach on the stovetop in shallow water with a bit of the minced garlic, then drain and squeeze it with a cloth to get rid of the water. Put it in the freezer for 10 minutes to cool. 3: Dice the onion and cook on the stovetop with the rest of the minced garlic. 4: Whisk the egg in one bowl, crush the feta cheese with a fork in another bowl, then combine. Add garlic powder and salt to taste. 5: Lay a sheet of filo pastry on a cutting board. Use a spoon to brush liquid egg white on one half, then fold. Then brush liquid egg white on half of that piece, then fold again. 6: Add the filling (spinach, onion, then egg + feta mixture in that order) in the middle of the filo pastry. Roll it, then seal with egg whites. Repeat this 6 times. 7: Cook in the oven at 350°F for 25 minutes or in the air fryer at 350°F for 10-12 minutes. 8: Let cool and enjoy!
