A healthier, high-protein version of the classic Pop-Tart, perfect for satisfying your sweet tooth. Made with a flatbread, flavored protein powder, coconut flour, and Greek yogurt, this recipe is a fun twist that you can enjoy even on a Monday night.

1: Preheat oven to 400F. 2: Trim the sides of the flatbread or wrap to make an even rectangle, then divide that into two halves. 3: Mix the protein powder, coconut flour, stevia, Greek yogurt, and half the sprinkles together in a bowl. Add 1-2 tbsp of cold water to get an icing-like consistency. 4: Lay out one pop tart half on a lined baking sheet, top with half the filling. 5: Dip the edges of the other pop tart half in water and add on top of the bottom piece. Use your fingers to seal, then use a fork dipped in water to crimp the edges. 6: Spray the top with a bit of cooking spray, then bake for 10 mins. 7: Let it cool for 10 mins, then add the rest of the icing and sprinkles on top.
