1: Heat up pot to medium, then add the onions & garlic and cook for a few mins. 2: Add whole peeled tomatoes, veggie broth, chopped basil, salt, cornstarch, tomato paste, then lower heat and simmer for 20 mins. 3: Pour into a blender and blend with the cottage cheese. 4: Pour into a wide bowl, sprinkle with Parmesan, then serve with crusty bread or grilled cheese.
