1: Preheat oven to 325F. 2: Make buttermilk by mixing the lemon juice with almond milk and setting aside. 3: Melt the margarine and let it cool for a few minutes while mashing the banana with a fork. 4: Mix the rest of the ingredients together and add the buttermilk and the margarine (add the white chocolate chips last). 5: Add batter to 6 muffin tins sprayed with cooking spray. 6: Bake for around 18 minutes, then let cool and enjoy!
