A high-protein take on classic pop-tarts made using an air fryer. Filled with protein powder, Greek yogurt, and powdered peanut butter, these treats are decadent yet nutritious. Perfect for those on a macro-friendly diet.
Trim the sides of the flatbread to make an even rectangle, then divide that into two halves (for the top and bottom of the pop tart).
Mix the protein powder, coconut flour, swerve, powdered PB, and Greek yogurt together (add 1 tbsp of water if needed).
Lay out one pop tart half on a lined baking sheet, top with half the filling.
Dip the edges of the other pop tart half in water and add on top of the bottom piece.
Use your fingers to seal, then use a fork dipped in water to crimp the edges.
Spray with a bit of cooking spray, then air fry at 350F for 8 mins (or bake at 400F for 10 mins).
Let cool for 5 mins, then frost with the leftover filling and top with sliced mini peanut butter cups.
 Take a bite!
